Welcome

Hello and Welcome. My intent is to show how to prepare “elegant” dishes at home and enjoy a little up-scale dining, that doesn’t always require buying the “Top of the line”.

You won’t find any Casseroles, Squash, South West or Mexican here; I tend to stick with New England, European and Chinese food groups as I enjoy them most.

As I have High blood pressure and high Cholesterol, I do not use any salt nor consume any beef or beef products.

My recipes are designed for two adults with an accompanying dish (I hate the word "side" it relegates an otherwise wonderful experience to nothingness). Typically my recipes take 1-1/2 hours or less from start to table (not counting marinating). So with that, let’s get to it.

The Fairy Tail

By today’s standards it’s a fairy tail

Some time ago back in the early 1980’s we went to a restaurant in West Brookfield, Mass. for dinner. There were four of us, myself, my wife and two young children well lo and behold; Sunday afternoon dinner it seems was a seven course French affair. Well we weren’t well to do and I was antsy that it would cost more then we could handle. My wife said it would be an experience of a lifetime.

The rest is history. The restaurant was the Brookfield House, a mansion by any standard. Well I’m going to try to recount the experience for you to the best of my recollection.

First we were seated at a table covered with a linen table cloth and linen napkins. It was set with silverware, I mean silverware, forks knives and spoons a plenty; Crystal glasses and fresh cut flowers in the center.

Our waiter arrived in a short jacket and tie, with a towel on his arm. He presented each a menu for us to make our selection of entrée, waiting patiently while we chose. We ordered roasted chicken breast entrée.

Shortly the appetizer arrived consisting of a three shrimp with a red sauce; Accompanied by a new fork. Water glasses refilled. (We chose not to order wine as the children were too young) By the way aside from wine, Ice chilled water is the best accompaniment for a meal. It cleanses the pallet and does not distract from the flavor of the food.

When we finished, the table was cleared, including the silverware and re-set. Upon which a broth of chicken was served. Finishing the broth, the dishes were removed and salads of mixed greens arrived. Salads finished, the table was once again cleared and a small dish of sorbet was presented. When finished, the dishes Whisked away, table reset new silver and crystal.

Within short order our entrée arrived. A wonderful roasted chicken breast surrounded by carrots and potatoes; which we enjoyed immensely.

The table was cleared again. New silverware and crystal and a small cup of lemon ice.

A desert of cake and ice cream was brought out after once again clearing the table.

Coffee and tea were offered, but the youngsters couldn’t participate, so we chose not to partake.

Why do you care to read this, well because it is the elegance of a simpler life when dining was an experience not an adventure; and to portray what life was like and what is still there.

To this day my sons remember and often speak of the experience of a kinder gentler time.

I realize times will not revert to this, but there are still establishments that offer similar fair. Try it - a vacation in your home territory if you will.
